The poultry can be substituted with goat meat or fish, where possible, for the elderly and ram or beef for the younger generation. Meat portions should be reduced for arthritis patients, while salt can be reduced for hypertensive patients. Vegetable oil used should be cholesterol-free.

The recipes have been simplified to make them possible for use by even a beginner in cookery. The importance of food to mankind cannot be overemphasised, for the saying goes ‘we are what we eat’. Your choice and quantity of food can improve or mar your overall health.

Palm oil, for instance, provides vitamin E and antioxidants, but can boost unhealthy cholesterol when used in excess. Cholesterol in itself is needed to build healthy cells, but high levels can increase the risk of heart disease. Therefore, there has to be a balance. It is also worth noting that sticking to a diet plan requires a lot of discipline and determination.
